Easy No Bake Pumpkin Pie in a Cup

With just a few ingredients and no oven needed, this pumpkin pie in a cup is the perfect fall treat to enjoy in the classroom! This simple no bake pumpkin pie in a cup is one of my favorite ways to wrap up our pumpkin investigation week! The students love that they get to “cook” in their classroom, and the added topping of whipped cream is always a crowd favorite! Pumpkin Pie Read Aloud
Before we make our pumpkin pie in a cup, I love to read a few books about pumpkins!
First, we read “Pumpkin Pumpkin” by Jeanne Titherington. As we are reading, we stop along the way to discuss the life cycle of a pumpkin.
We also read “From Seed to Pumpkin” by Wendy Pfeffer which is another great book that highlights the life cycle of a pumpkin.
Toward the end of the book, they talk about the ways pumpkins are used once they are fully grown. One way they are used is to make pumpkin pie, which is a great segue way into making our pumpkin pie in a cup.
Pumpkin Pie in a Cup Recipe
This pumpkin pie in a cup recipe is super easy to make and uses a few simple ingredients.
Before making this recipe, I like to send a letter to families letting them know we will be enjoying this treat in class. I share the ingredients and make sure it is safe for all to enjoy. I also send a donation sign up link.
Depending on dietary restrictions, you can always make a few minor swaps. You could consider grabbing a box of gluten free graham crackers or dairy free whipped cream.
Pumpkin Pie in a Cup Recipe
Ingredients
The following recipe yields one student cup of pumpkin pie.
- 1 Full Graham Cracker
- 3/4 Cup of Vanilla Pudding or 1 1/2 cup Pudding Cups
- 2 Tablespoons of Pumpkin Pie Filling
- 1 Dash of Pumpkin Pie Spice
- 1 Dollop of Whipped Cream or Redi Whip
Directions
- Place the graham cracker inside a zippered sandwich bag and crush.
- Pour the graham cracker crumbs into the bottom of a cup.
- In a separate bowl or cup, mix the vanilla pudding, pumpkin pie filling or puree, and pumpkin pie spice. I have my students each mix their own ingredients, but you could also mix these ingredients ahead of time so that you have enough for an entire class.
- Scoop the pumpkin pie and pudding mixture on top of the crumbled graham crackers.
- Add a dollop of whipped cream and enjoy!

Pumpkin Pie In a Cup Math Activities
Pumpkin pie isn’t a taste that everyone enjoys, but I always encourage students to at least give their pumpkin pie in a cup a try.
After students eat (or choose not to eat) their pumpkin pie in a cup, we complete a few math activities!
First, I have students survey eight friends to get their opinion on whether they liked, did not like, or fell somewhere in between when it came to the taste of their pumpkin pie.
Then, we analyze and graph the data. The last step involves coloring our pages with crayons and colored pencils. These sheets will be added to our “All About Pumpkins” book!
